Pressing method

Modern press

The olives of this lot are pressed in a modern continuous mill in Hasbaya. They are washed and cleared of leaves, crushed to a paste in a stainless-steel crusher, and stirred slowly (malaxation) so the oil droplets gather. A horizontal centrifuge, the decanter, then spins the oil away from the water and the crushed pits and skins. The process is quick and closed, with little contact with air, which helps keep the oil's fresh, green aromas and its natural polyphenols.

The pin marks the general area of Lot 1; it is indicative only.
